Ingredients

1 cup sushi rice

1 1/4 cups water

2 tablespoons rice vinegar

1 tablespoon sugar

1 teaspoon salt

8 ounces sushi-grade tuna, diced

2 tablespoons mayonnaise (preferably Kewpie)

1 tablespoon Sriracha (adjust for spice preference)

1 teaspoon soy sauce

1 avocado, sliced

1 small cucumber, julienned

1/4 cup edamame, shelled

2 green onions, thinly sliced

1 tablespoon toasted sesame seeds

1 sheet nori, cut into strips (optional for garnish)

Pickled ginger (for serving)

Wasabi (for serving)

Instructions

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium heat, then reduce the heat to low, cover, and simmer for about 18-20 minutes or until the water is absorbed and the rice is tender. Remove from heat and let it sit, covered, for an additional 10 minutes.

Season the Rice: In a small saucepan, combine the rice vinegar, sugar, and salt over low heat until dissolved. Once the rice has rested, transfer it to a large bowl and gently fold in the vinegar mixture. Let the rice cool to room temperature.

Prepare the Spicy Tuna: In a medium bowl, combine the diced tuna, mayonnaise, Sriracha, and soy sauce. Mix well until all the tuna is coated with the spicy mixture. Adjust the spice level to your liking by adding more Sriracha if desired.

Assemble the Bowls: Divide the seasoned sushi rice evenly among serving bowls. Top each bowl with a generous scoop of spicy tuna. Arrange the avocado slices, julienned cucumber, and edamame around the tuna.

Garnish: Sprinkle the bowls with sliced green onions and toasted sesame seeds. If using, add nori strips on top for an extra crunch.

Serve: Serve the spicy tuna sushi bowls with pickled ginger and a dollop of wasabi on the side for those who want an extra kick.
