1 cup sushi rice

1 1/4 cups water

2 tablespoons rice vinegar

1 tablespoon sugar

1/2 teaspoon salt

8 ounces sushi-grade tuna, diced

1-2 tablespoons Sriracha (adjust according to spice preference)

1 tablespoon mayonnaise (preferably Kewpie)

1 avocado, diced

1/4 cup green onions, thinly sliced

1 tablespoon sesame oil

1 tablespoon soy sauce

1 teaspoon sesame seeds (for garnish)

Nori sheets, cut into strips (for garnish)

Instructions
 

Prepare the Sushi Rice: Rinse the sushi rice in cold water until the water runs clear. Place the rice and water in a rice cooker, or a pot with a lid. Cook according to your rice cooker instructions or bring to a boil, then reduce to a simmer for 18-20 minutes until the water is absorbed.

    Season the Rice: In a small bowl, mix together rice vinegar, sugar, and salt. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture while the rice is still warm. Allow it to cool to room temperature.

      Make the Spicy Tuna Filling: In another bowl, combine the diced tuna, Sriracha, mayonnaise, and sesame oil. Mix well and adjust seasoning to your desired spice level.

        Prepare the Avocado: Gently toss the diced avocado with a pinch of salt and a splash of lime juice to prevent browning.

          Assemble the Stacks: Using a 3-inch round mold or a small cup, start with a layer of sushi rice at the bottom. Press it down gently to create a compact layer. Next, add a layer of the spicy tuna mixture, followed by a layer of diced avocado. Repeat the layers if your mold allows for height, finishing with a layer of sushi rice on top.

            Garnish and Serve: Carefully lift the mold off to reveal the stacked sushi. Top with a sprinkle of green onions and sesame seeds. Serve immediately with soy sauce and nori strips on the side.
