Ingredients

4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and chopped

1 cup cream cheese, softened

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1/2 teaspoon red pepper flakes (optional for heat)

Fresh herbs for garnish (like parsley or basil)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Filling: In a large mixing bowl, combine the chopped spinach, chopped artichokes, softened cream cheese, Parmesan, mozzarella, minced garlic, onion powder, garlic powder, salt, black pepper, and red pepper flakes (if using). Mix until all ingredients are well incorporated and form a thick filling.

Prepare the Chicken Breasts: Using a sharp knife, create a pocket in each chicken breast by slicing horizontally. Be careful not to cut all the way through.

Stuff the Chicken: Generously stuff each chicken breast pocket with the spinach-artichoke filling. Use toothpicks or kitchen twine to secure the opening if necessary.

Sear the Chicken: In a large oven-proof skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed chicken breasts and sear for about 4-5 minutes on each side until they are golden brown. This helps to lock in moisture.

Bake the Chicken: Transfer the skillet to the preheated oven. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Rest and Serve: Once cooked, remove the chicken from the oven and let it rest for 5 minutes. This will keep it juicy. Remove toothpicks or twine, garnish with fresh herbs, and serve warm.

Enjoy! Serve alongside a fresh salad, roasted vegetables, or a creamy risotto for a complete meal.
