Spinach Dip Chicken Pasta

Ingredients
  

12 oz pasta (penne or rotini works well)

2 cups fresh spinach, chopped

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded mozzarella cheese

1 cup cooked chicken, shredded (rotisserie chicken is great)

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

2 tablespoons olive oil

1/4 cup chopped green onions, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Sauté Spinach and Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, then add the chopped spinach. Cook until the spinach wilts down, about 2-3 minutes.

      Mix the Dip: In the skillet with the spinach, lower the heat and add the cream cheese, sour cream, and mozzarella cheese. Stir until the cheeses are melted and combined into a creamy mixture. Add in the cooked, shredded chicken.

        Season: Sprinkle in the garlic powder, onion powder, red pepper flakes, salt, and pepper. Mix well and adjust seasoning to your taste.

          Combine with Pasta: Add the cooked pasta to the skillet with the spinach dip mixture. If the sauce seems too thick, gradually add reserved pasta water until you reach your desired creaminess.

            Finish with Parmesan: Stir in the grated Parmesan cheese until melted and everything is well combined.

              Serve: Garnish with chopped green onions for a fresh touch and serve warm.
