Ingredients

For the Meatballs:

1 lb ground chicken (or turkey)

1/4 cup breadcrumbs (preferably panko for extra crunch)

1 egg

3 green onions, finely chopped

2 cloves garlic, minced

1 tbsp fresh ginger, grated

1 tsp soy sauce

1 tsp sesame oil

Salt and pepper, to taste

For the Sticky Sauce:

1/4 cup soy sauce

1/4 cup honey

1 tbsp rice vinegar

1 tbsp sesame oil

1 tsp fresh ginger, grated

1/2 tsp red pepper flakes (adjust for spice preference)

1 tbsp cornstarch

2 tbsp cold water

To Garnish:

Sesame seeds

Chopped cilantro

Extra green onions, sliced

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, and season with salt and pepper. Mix thoroughly until all ingredients are well incorporated.

Shape the Meatballs: Using your hands, form the mixture into bite-sized meatballs, approximately 1 to 1.5 inches in diameter. Place them on the prepared baking sheet, ensuring they are spaced evenly.

Bake the Meatballs: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the meatballs are fully cooked through and slightly golden on the outside.

Make the Sticky Sauce: While the meatballs are baking, whisk together the soy sauce, honey, rice vinegar, sesame oil, grated ginger, and red pepper flakes in a small saucepan over medium heat. In a separate small bowl, mix the cornstarch with cold water to create a slurry, then add it to the sauce mixture. Stir continuously until the sauce thickens (about 2-3 minutes), then remove from heat.

Coat the Meatballs: Once the meatballs are done baking, transfer them to a large mixing bowl. Pour the sticky sauce over the warm meatballs and toss gently to coat them evenly.

Garnish and Serve: Serve the meatballs warm, garnished with sesame seeds, chopped cilantro, and additional sliced green onions. These sticky meatballs are perfect over rice or a bed of steamed vegetables for a complete meal!

Meal Prep Tip: Divide the meatballs into meal prep containers and pair with your choice of rice or veggies for a week's worth of delicious lunches or dinners.
