Ingredients

1 cup fresh strawberries, hulled and sliced

1 ripe banana, sliced

2 cups whole milk

1/2 cup granulated sugar

1/4 cup cornstarch

1/4 teaspoon salt

1 teaspoon vanilla extract

2 large egg yolks

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract (for whipped cream)

1 cup vanilla wafer cookies

Instructions

Prepare the Fruit: In a small bowl, toss the sliced strawberries and bananas together. Set aside to let their natural juices meld.

Make the Pudding Base: In a medium saucepan, whisk together the granulated sugar, cornstarch, and salt. Gradually add the whole milk while whisking until well blended. Cook over medium heat, stirring constantly, until the mixture begins to thicken and bubble (about 8-10 minutes).

Combine Egg Yolks: In a separate bowl, whisk the egg yolks. Slowly add about 1/2 cup of the hot milk mixture to the egg yolks, whisking constantly to temper the eggs. Then, pour the egg mixture back into the saucepan. Continue to cook for an additional 2-3 minutes, stirring, until thickened further.

Add Flavor: Remove the pan from heat and stir in the vanilla extract. Transfer the pudding into a bowl and cover it with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Let it cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours to fully set.

Whip the Cream: In a large bowl, beat the heavy whipping cream with the powdered sugar and 1 teaspoon of vanilla extract until soft peaks form. Refrigerate until ready to use.

Layer the Pudding: In serving cups or a large glass dish, begin layering. Start with a layer of vanilla wafers, then a layer of the chilled pudding, followed by a layer of the sliced fruit. Repeat the layers until all ingredients are used, finishing with a layer of whipped cream on top.

Garnish: Top the whipped cream with extra sliced strawberries and banana pieces, and a sprinkle of crushed vanilla wafers for crunch.

Chill and Serve: Let the assembled pudding chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld. Enjoy your scrumptious Strawberry Banana Dream Pudding!
