Ingredients

1 cup dried strawberries, chopped

1 cup rolled oats

1 cup unsweetened shredded coconut

1/2 cup almond butter (or any nut butter of choice)

1/4 cup honey or maple syrup

1/4 cup chia seeds

1 teaspoon vanilla extract

Pinch of salt

Optional: 1/4 cup dark chocolate chips or cacao nibs for extra flavor

Instructions

Prepare the Ingredients: Begin by chopping the dried strawberries into smaller pieces, ensuring they're easy to mix and bite-sized.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, chia seeds, and a pinch of salt. If using chocolate chips or cacao nibs, add them here as well.

Combine Wet Ingredients: In a separate bowl, mix together the almond butter, honey (or maple syrup), and vanilla extract until smooth and well combined.

Combine Mixtures: Pour the wet mixture into the dry ingredients. Stir everything together using a spatula or your hands until it forms a sticky dough. If the mixture seems too dry, add a splash of water or an additional teaspoon of nut butter. If too sticky, add a bit more shredded coconut or oats.

Form the Balls: With slightly damp hands, take a small scoop of the mixture (about 1 tablespoon) and roll it into a ball. Place it on a parchment-lined baking sheet. Repeat this process until all the mixture is rolled into balls.

Chill and Set: Once all the energy balls are formed, place them in the refrigerator for at least 30 minutes to help firm up.

Serve and Enjoy: After chilling, the Strawberry Coconut Energy Balls are ready to be enjoyed! Store leftovers in an airtight container in the fridge for up to one week.
