For the Turkey:

1 whole turkey (12-14 pounds), thawed

2 tablespoons olive oil

Salt and pepper to taste

1 onion, quartered

2 carrots, chopped

2 celery stalks, chopped

4 cups chicken broth

For the Strawberry Glaze:

2 cups fresh strawberries, hulled and halved

1 cup strawberry jam

1/4 cup balsamic vinegar

1/4 cup honey

2 teaspoons fresh thyme, chopped

1 teaspoon garlic powder

Salt and pepper to taste

For Garnish:

Fresh strawberries and thyme sprigs

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (165°C).

    Prepare the Turkey:

      - Remove the turkey from its packaging and pat it dry with paper towels.

        - Rub the entire turkey with olive oil, ensuring an even coating.

          - Season generously with salt and pepper, including the cavity.

            Stuff the Turkey:

              - Fill the cavity of the turkey with the quartered onion, chopped carrots, and celery for added flavor.

                Roast the Turkey:

                  - Place the turkey breast side up on a rack in a roasting pan.

                    - Pour the chicken broth into the bottom of the pan to keep the turkey moist during cooking.

                      - Loosely tent the turkey with aluminum foil to prevent browning and place it in the oven.

                        Make the Strawberry Glaze:

                          - In a saucepan over medium heat, combine the hulled strawberries, strawberry jam, balsamic vinegar, honey, thyme, garlic powder, salt, and pepper.

                            - Stir until the mixture comes to a gentle boil, then reduce the heat and let it simmer for about 10-15 minutes, or until thickened and syrupy.

                              - Use a blender or immersion blender to purée the glaze until smooth, if desired.

                                Baste the Turkey:
