Strawberry Lemonade Popsicles

Ingredients
  

2 cups fresh strawberries, hulled and sliced

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1 cup sugar (or honey, for a healthier option)

2 cups water

Zest of 1 lemon (optional, for extra flavor)

A pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

Make the Strawberry Puree:

    - In a blender, combine the sliced strawberries and 1/4 cup of sugar (or honey). Blend until smooth and set aside.

      Prepare the Lemonade:

        - In a medium saucepan over medium heat, combine 2 cups of water and the remaining 3/4 cup of sugar (or honey). Stir until the sugar is fully dissolved.

          - Remove from heat and add the freshly squeezed lemon juice, lemon zest (if using), and a pinch of salt. Mix well.

            Assemble the Popsicles:

              - In your popsicle molds, pour a layer of the strawberry puree (about 1/4 of each mold).

                - Follow with a layer of the lemonade mixture (another 1/4 of each mold).

                  - Repeat the layers until the molds are nearly full, leaving a small space at the top for expansion.

                    Insert Sticks and Freeze:

                      - Insert the popsicle sticks into each mold. If your molds don't fit sticks well, place plastic wrap over the tops and poke the sticks through.

                        - Freeze for at least 6 hours or until thoroughly solid.

                          Unmold and Serve:

                            - To release the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out.

                              - Serve immediately, garnished with fresh mint leaves if desired.
