1 tsp vanilla extract

1/4 cup heavy cream

For the Rolls:

1 package (8 oz) refrigerated crescent roll dough

1 cup fresh strawberries, hulled and sliced

2 tbsp granulated sugar

1/2 tsp vanilla extract

1/4 cup graham cracker crumbs

2 tbsp melted butter

For the Topping:

Additional whipped cream (store-bought or homemade)

Fresh strawberry slices for garnish

Mint leaves for garnish (optional)

Instructions

Prepare the Cheesecake Filling:

    - In a mixing bowl, combine the softened cream cheese with powdered sugar and vanilla extract. Beat with an electric mixer until smooth and creamy.

      - In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold the whipped cream into the cream cheese mixture until fully incorporated. Set aside.

        Prepare the Strawberries:

          - In a small bowl, toss the sliced strawberries with granulated sugar and 1/2 tsp of vanilla extract. Let them sit for about 10 minutes to create a syrupy mixture.

            Assemble the Rolls:

              - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

                - Roll out the crescent roll dough on a lightly floured surface and pinch the seams together to create a single sheet.

                  - Spread an even layer of the cheesecake filling over the dough, leaving a small border around the edges.

                    - Evenly distribute the tossed strawberries over the cheesecake filling.

                      - Sprinkle graham cracker crumbs over the strawberries, then drizzle melted butter on top to help with flavor and texture.

                        Roll and Cut:

                          - Starting from the long side, carefully roll the dough into a tight log. Once rolled, slice the log into approximately 8 equal pieces.

                            - Place the rolls cut side up onto the prepared baking sheet, spaced apart.

                              Bake:

                                - Bake in the preheated oven for 15-18 minutes, or until golden brown and puffed.

                                  Cool and Serve:

                                    - Remove from the oven and allow the rolls to cool for a few minutes. Serve warm or at room temperature.

                                      - Top each roll with a dollop of whipped cream, additional fresh strawberry slices, and a mint leaf for garnish if using.
