8 oz whole wheat or regular pasta (rotini or penne)

4 cups fresh baby spinach, washed and dried

1 cup strawberries, hulled and sliced

1 cup cherry tomatoes, halved

1/2 cup red onion, thinly sliced

1/2 cup feta cheese, crumbled

1/4 cup walnuts or pecans, roughly chopped

1/4 cup balsamic vinaigrette (store-bought or homemade)

Salt and pepper, to taste

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Vegetables: While the pasta is cooling, wash and dry the baby spinach. Slice the strawberries and cherry tomatoes, and thinly slice the red onion.

      Combine the Ingredients: In a large salad bowl, combine the cooled pasta, spinach, strawberries, cherry tomatoes, red onion, and feta cheese. Gently toss to mix all the ingredients together.
