Ingredients

8 oz (about 225 g) whole wheat pasta (farfalle or rotini works great)

4 cups fresh baby spinach, washed and dried

1 cup strawberries, hulled and sliced

1/2 cup feta cheese, crumbled

1/4 cup walnuts, roughly chopped

1/4 cup red onion, thinly sliced

1/4 cup balsamic vinaigrette dressing (store-bought or homemade)

Salt and pepper to taste

Optional: fresh basil leaves for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Once cooked, drain the pasta and rinse under cold water to cool.

Prepare the Dressing: In a small bowl, whisk together the balsamic vinaigrette, a pinch of salt, and pepper. Set aside.

Combine Ingredients: In a large salad bowl, combine the cooled pasta, baby spinach, sliced strawberries, crumbled feta cheese, walnuts, and red onion.

Dress the Salad: Drizzle the prepared balsamic vinaigrette over the salad mixture. Gently toss everything together until all ingredients are well coated.

Chill: For best flavor, let the salad chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Serve: Before serving, give the salad a gentle toss and add fresh basil leaves if desired. Adjust seasoning with salt and pepper.
