Ingredients

For the Cake:

2 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened

1 cup sour cream

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

For the Streusel Topping:

1/2 cup all-purpose flour

1/3 cup packed brown sugar

1/4 cup unsalted butter, melted

1 teaspoon ground cinnamon

1/2 cup chopped pecans or walnuts (optional)

For the Glaze:

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper for easy removal.

Prepare the Streusel: In a medium bowl, mix together 1/2 cup flour, brown sugar, melted butter, ground cinnamon, and nuts (if using). Stir until crumbly and set aside.

Make the Cake Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract.

Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.

Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the sour cream. Start and end with the dry ingredients. Mix until just combined; do not overmix.

Layer the Batter: Pour half of the batter into the prepared baking pan and spread it evenly. Sprinkle half of the streusel topping over the batter. Spread the remaining batter on top and finish with the remaining streusel topping.

Bake the Cake: Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Prepare the Glaze: While the cake is cooling, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.

Finish the Cake: Once the cake has cooled slightly, drizzle the glaze on top. Let it sit for a few minutes to set before slicing.

Serve and Enjoy: Cut into squares and serve warm or at room temperature with a cup of coffee or tea.
