Stuffed Bell Peppers with Ground Turkey

4 large bell peppers (any color)

1 lb ground turkey

1 cup cooked quinoa (or rice)

1 small onion, diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (drained)

1 cup corn (frozen or canned)

1 tsp chili powder

1 tsp cumin

1/2 tsp oregano

Salt and pepper to taste

1 cup shredded cheese (cheddar or mozzarella)

Fresh cilantro or parsley for garnish

Prepare the Bell Peppers: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.

    Cook the Turkey Mixture: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, sauté the diced onion and garlic until translucent (about 3-4 minutes). Add the ground turkey and cook until browned, breaking it up with a spoon.

      Mix the Filling: Stir in the cooked quinoa, drained diced tomatoes, corn, chili powder, cumin, oregano, and season with salt and pepper. Cook for an additional 5 minutes to combine all flavors well.

        Stuff the Peppers: Spoon the turkey mixture into each bell pepper, packing it down slightly. Place the stuffed peppers in the baking dish.

          Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. After 25 minutes, remove the foil, sprinkle the shredded cheese on top of each pepper, and bake uncovered for another 10-15 minutes or until the cheese is melted and bubbly, and the peppers are tender.

            Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro or parsley before serving.
