Stuffed Cabbage Rolls

1 large head of green cabbage

1 lb ground beef (or turkey)

1 cup cooked rice (white or brown)

1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) tomato sauce

2 tbsp Worcestershire sauce

1 tsp smoked paprika

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

1/4 cup fresh parsley, chopped (plus extra for garnish)

2 cups vegetable or chicken broth

1 tbsp olive oil

Prepare the Cabbage: Bring a large pot of salted water to a boil. Carefully remove the core of the cabbage with a sharp knife. Once the water is boiling, submerge the entire head of cabbage for about 5 minutes or until the outer leaves start to soften. Remove and let cool. Carefully peel off about 12 leaves; set aside.

    Make the Filling: In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent, about 3-4 minutes. In a large bowl, combine ground meat, cooked rice, sautéed onion and garlic, Worcestershire sauce, smoked paprika, oregano, salt, pepper, and parsley. Mix until well combined.

      Assemble the Rolls: Lay a cabbage leaf on a flat surface. Place about 2-3 tablespoons of filling near the base of the leaf. Fold the sides over the filling and then roll tightly from the base upwards to create a neat roll. Repeat until all filling is used.

        Prepare the Sauce: In a large pot, pour a thin layer of tomato sauce to prevent sticking. Arrange the stuffed cabbage rolls seam-side down in the pot. Pour the remaining tomato sauce over the rolls and add enough broth to cover them halfway.

          Cook the Rolls: Bring the pot to a gentle simmer, cover with a lid, and cook for about 45-60 minutes on low heat. Check occasionally, and if the sauce begins to dry, add a little more broth.

            Serve and Garnish: Once cooked, remove the pot from heat. Carefully transfer the cabbage rolls to a serving platter. Spoon additional tomato sauce from the pot over the rolls and garnish with fresh parsley.
