Stuffed Chicken Parmesan Meatballs

1 lb ground chicken

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1/2 cup mozzarella cheese, shredded

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 large egg

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1 cup marinara sauce (store-bought or homemade)

1/4 cup additional mozzarella cheese for topping

Olive oil for drizzling

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Filling: In a small bowl, mix together the mozzarella cheese with a pinch of Italian seasoning and a dash of pepper. Set aside.

      Make the Meatball Mixture: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, parsley, minced garlic, egg, Italian seasoning, salt, and black pepper. Mix until all ingredients are well combined, but do not overmix.

        Form the Meatballs: With your hands, take a tablespoon-sized portion of the meat mixture and flatten it in your palm. Place about 1 teaspoon of the mozzarella filling in the center and fold the meat around it to seal. Roll into a ball and place on the prepared baking sheet. Repeat for all the mixture.

          Drizzle and Bake: Lightly drizzle the meatballs with olive oil and bake in the preheated oven for about 20-25 minutes until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

            Add the Marinara Sauce: Remove the meatballs from the oven and spoon marinara sauce over them, then sprinkle with the additional mozzarella cheese on top. Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

              Serve: Allow the meatballs to cool for a few minutes before serving. Plate them with more marinara sauce on the side and a sprinkle of fresh parsley for garnish. Enjoy!
