Ingredients

8 slices of thick bread (Challah or Brioche recommended)

4 ounces cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup mixed berries (strawberries, blueberries, raspberries)

2 large eggs

1 cup milk

1 teaspoon cinnamon

1 teaspoon nutmeg

1 tablespoon butter

Maple syrup, for serving

Fresh mint leaves, for garnish (optional)

Instructions

Prepare the Filling: In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth. Gently fold in the mixed berries, being careful not to mash them.

Assemble the French Toast: Lay 4 slices of bread on a clean surface. Spread an even layer of the cream cheese and berry mixture on each slice. Top with the remaining 4 slices of bread, pressing gently to create sandwiches.

Make the Egg Mixture: In a shallow bowl, whisk together the eggs, milk, cinnamon, and nutmeg until well combined.

Coat the Sandwiches: Carefully dip each sandwich into the egg mixture, allowing it to soak for about 30 seconds on each side. Ensure they are well coated but not overly saturated.

Cook the French Toast: In a large skillet or griddle, melt the butter over medium heat. Once hot, add the stuffed sandwiches in batches (avoid overcrowding). Cook for about 3-4 minutes per side, or until golden brown and cooked through.

Serve: Remove the French toast from the skillet and slice in half if desired. Serve warm, drizzled with maple syrup, and garnish with fresh mint leaves for an added touch.

Enjoy: Dig in and savor the delightful combination of sweet, creamy filling and warm, fluffy bread!
