Stuffed Shells Recipe

Ingredients
  

12 large pasta shells

1 cup ricotta cheese

1 cup cooked spinach, squeezed dry and chopped

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 egg, beaten

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

3 cups marinara sauce

Fresh basil leaves, for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Cook the pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.

      In a large mixing bowl, combine ricotta cheese, cooked spinach, half of the mozzarella cheese, half of the Parmesan cheese, beaten egg, minced garlic, oregano, basil, salt, and pepper. Mix well until all ingredients are fully incorporated.

        Spread 1 cup of marinara sauce evenly over the bottom of a 9x13 inch baking dish.

          Stuff each cooked shell with about 2 tablespoons of the ricotta-spinach mixture and place them in the baking dish, open side up.

            Once all shells are stuffed, cover them with the remaining marinara sauce, allowing some sauce to pool in between the shells.

              Sprinkle the remaining mozzarella and Parmesan cheese evenly over the top.

                Cover the baking dish with aluminum foil (to prevent sticking, you can spray the foil with cooking spray) and bake in the preheated oven for 25 minutes.

                  Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbling and golden brown.

                    Garnish with fresh basil leaves before serving for a pop of color and flavor.
