Summer Shrimp & Pineapple Rice Bowls

1 lb large shrimp, peeled and deveined

1 cup jasmine rice

1 3/4 cups coconut milk

1 cup fresh pineapple, diced

1 red bell pepper, diced

1 small red onion, chopped

2 cloves garlic, minced

1 tbsp fresh ginger, grated

1 tbsp soy sauce

1 tbsp lime juice

2 tbsp olive oil

2 tbsp fresh cilantro, chopped (for garnish)

1/2 tsp salt

1/2 tsp black pepper

Instructions
 

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice and coconut milk. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and let it rest for 5 minutes, then fluff with a fork.

    Prepare the Shrimp: While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the chopped red onion and garlic, sautéing for about 2 minutes until fragrant.

      Add Pineapple and Bell Pepper: Stir in the diced pineapple and red bell pepper to the skillet. Sauté for another 3-4 minutes until the bell pepper becomes slightly tender.

        Cook the Shrimp: Add the shrimp, grated ginger, soy sauce, lime juice, salt, and black pepper into the skillet. Cook everything together for about 5-7 minutes, or until the shrimp turn pink and opaque.

          Assemble the Bowls: To serve, spoon the fluffy coconut jasmine rice into serving bowls. Top with the shrimp and pineapple mixture.
