Summer Veggie Orzo with Feta & Fresh Herbs

1 cup orzo pasta

2 tablespoons olive oil

1 medium zucchini, diced

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

3 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper, to taste

½ cup feta cheese, crumbled

¼ cup fresh basil, chopped

¼ cup fresh parsley, chopped

Juice of 1 lemon

Zest of 1 lemon

Instructions
 

Cook the Orzo: In a large pot of salted boiling water, add the orzo and cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

    Sauté Veggies: In a large skillet, heat the olive oil over medium heat. Add the diced zucchini, bell pepper, and corn. Sauté for about 5-7 minutes, until they begin to soften.

      Add Garlic and Tomatoes: Stir in the minced garlic and halved cherry tomatoes, cooking for an additional 3-4 minutes. The tomatoes should start to soften and release some juices.

        Season the Mixture: Sprinkle in the dried oregano, salt, and pepper to taste. Mix well to combine.

          Combine Ingredients: Add the cooked orzo to the skillet with the veggies. If it seems a bit dry, stir in a splash of the reserved pasta water until you reach your desired consistency.

            Finish with Feta and Herbs: Remove from heat, then fold in the crumbled feta, chopped basil, and parsley. Squeeze in the lemon juice and add the lemon zest, stirring gently but thoroughly to combine all the flavors.
