Sun-Dried Tomato Pasta

8 oz (225g) spaghetti or fettuccine

1 cup sun-dried tomatoes in oil, drained and chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup Parmesan cheese, grated

1/2 cup fresh basil leaves, chopped

1/4 tsp red pepper flakes (optional for heat)

Salt and pepper to taste

2 tbsp olive oil

1/4 cup pine nuts, toasted (for garnish)

Fresh basil leaves for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or fettuccine and cook according to package directions until al dente. Reserve 1 cup of pasta cooking water, then drain and set aside.

    Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for another 2-3 minutes. If using, sprinkle in the red pepper flakes for that extra kick.

        Create the Creamy Base: Pour in the heavy cream and bring the mixture to a gentle simmer. Allow it to simmer for 3-4 minutes, stirring occasionally until it thickens slightly.

          Incorporate Cheese: Lower the heat and gradually stir in the grated Parmesan cheese, mixing well until fully melted and smooth. If the sauce gets too thick, add a splash of the reserved pasta water until desired consistency is achieved.

            Combine with Pasta: Add the drained pasta to the skillet and toss to combine everything thoroughly, ensuring the noodles are well coated in the creamy sauce. Season with salt and pepper to taste.

              Finish with Basil: Remove from heat and stir in the fresh basil leaves for a burst of flavor and color.
