Ingredients

1 package (9 oz) of fresh or frozen cheese ravioli

1 cup sun-dried tomatoes in olive oil, drained and chopped

2 cups fresh spinach, roughly chopped

2 cups marinara sauce (store-bought or homemade)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Ravioli: If using fresh ravioli, boil them for about 2-3 minutes until they float to the surface. If using frozen, cook according to package instructions. Drain and set aside.

Prepare the Filling: In a large mixing bowl, combine ricotta cheese, chopped sun-dried tomatoes, garlic, spinach, red pepper flakes (if using), and a pinch of salt and pepper. Mix until well incorporated.

Layer Ingredients: In a greased 9x13 inch baking dish, spread a thin layer of marinara sauce at the bottom. Next, place half of the cooked ravioli over the sauce, followed by half of the ricotta mixture, and then drizzle some more marinara sauce over the top. Repeat with the remaining ravioli and ricotta mixture, finishing with a generous layer of marinara sauce.

Add Cheese Topping: Sprinkle the top with shredded mozzarella and Parmesan cheese, ensuring an even layer.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

Garnish and Serve: Once baked, let the dish cool for about 5 minutes. Garnish with fresh basil or parsley, if desired, and serve warm.
