1 medium green cabbage, shredded

1 large onion, finely chopped

2 cloves garlic, minced

1 cup apple cider vinegar

1 cup sugar (brown sugar or granulated)

1/2 cup ketchup

1 teaspoon ground mustard

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

1/2 cup diced bell pepper (red or yellow for sweetness)

1/4 teaspoon red pepper flakes (optional for heat)

Fresh parsley, chopped (for garnish)

Prepare the Cabbage: Rinse the cabbage under cold water, then remove the outer leaves. Cut it into quarters, remove the core, and shred the cabbage finely. Set aside.

    Sauté Vegetables: In a large skillet or pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onions become translucent, about 5 minutes.

      Add Cabbage: Stir in the shredded cabbage and diced bell pepper. Cook for about 5-7 minutes until the cabbage starts to soften, stirring occasionally.

        Mix the Sauce: In a separate bowl, combine the apple cider vinegar, sugar, ketchup, ground mustard, salt, black pepper, and red pepper flakes. Mix well until the sugar has dissolved.

          Combine and Simmer: Pour the sweet and sour sauce over the cabbage mixture. Stir to coat all the vegetables evenly. Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for about 20-25 minutes, stirring occasionally, until the cabbage is tender.
