1 lb ground beef (or ground turkey for a lighter option)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon black pepper

1 teaspoon salt

1 teaspoon Italian seasoning

1 tablespoon fresh parsley, chopped (optional)

For the Sweet and Sour Sauce:

1 cup pineapple juice

1/2 cup rice vinegar

1/2 cup brown sugar

1/4 cup soy sauce

2 tablespoons cornstarch mixed with 2 tablespoons water (slurry)

1/2 bell pepper, diced (red or green)

1/2 cup diced pineapple (fresh or canned)

1 tablespoon sesame oil

1 teaspoon minced ginger

Prepare the Meatballs: In a large mixing bowl, combine ground beef, breadcrumbs, grated Parmesan, egg, garlic, onion powder, black pepper, salt, Italian seasoning, and chopped parsley. Mix by hand until well combined but do not over-mix. Form the mixture into bite-sized meatballs (about 1 inch in diameter).

    Bake the Meatballs: Preheat your oven to 400°F (200°C). Place the meatballs on a parchment-lined baking sheet. Bake for 15-20 minutes or until browned and cooked through, turning halfway for even cooking.

      Make the Sweet and Sour Sauce: In a saucepan over medium heat, combine pineapple juice, rice vinegar, brown sugar, soy sauce, minced ginger, and sesame oil. Stir until the brown sugar is dissolved and the mixture starts to simmer.
