1 pound (450g) large shrimp, peeled and deveined

1/2 cup honey

1/4 cup soy sauce (preferably low sodium)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon rice vinegar

2 tablespoons sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Salt and pepper to taste

Cooked jasmine rice or steamed vegetables (for serving)

Instructions
 

Marinate the Shrimp: In a bowl, combine the shrimp with a pinch of salt and pepper. Set aside while you prepare the sauce.

    Make the Sauce: In a medium saucepan over medium heat, combine honey, soy sauce, minced garlic, grated ginger, rice vinegar, and sesame oil. Bring the mixture to a gentle simmer, stirring occasionally.

      Thicken the Sauce: Once the sauce is simmering, slowly add the cornstarch slurry. Stir continuously as the sauce begins to thicken (about 2-3 minutes). Once thickened, remove from heat and set aside.

        Cook the Shrimp: In a large skillet or wok, heat a little oil over medium-high heat. Add the marinated shrimp in a single layer, cooking for about 2-3 minutes on one side until pink and opaque. Turn the shrimp over.

          Coat with Sauce: Pour the thickened honey garlic sauce over the shrimp in the skillet. Toss to coat evenly and allow to cook for another 2 minutes, ensuring the shrimp is fully coated and heated through.
