Ingredients

2 cups rolled oats

1 cup grated apples (about 2 medium apples, peeled)

1/2 cup unsweetened applesauce

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1/3 cup brown sugar (packed)

1 teaspoon ground cinnamon

1/2 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans) (optional)

1/4 cup raisins or dried cranberries (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper for easy removal.

Mix Wet Ingredients: In a large mixing bowl, combine the grated apples, applesauce, almond butter, honey (or maple syrup), brown sugar, vanilla extract, and cinnamon. Stir until well-blended.

Add Dry Ingredients: In a separate bowl, mix together the rolled oats, baking powder, and salt. Slowly add the dry mixture to the wet mixture, stirring until just combined. If desired, fold in the chopped nuts and raisins or cranberries.

Spread into Pan: Pour the mixture into the prepared baking pan, spreading it out evenly with a spatula. Use the back of a measuring cup or your hands (lightly wet) to press the mixture down firmly to ensure it holds together.

Bake: Place the pan in the preheated oven and bake for 25-30 minutes or until the edges start to turn golden brown and a toothpick inserted in the center comes out clean.

Cool and Cut: Allow the oatmeal squares to cool in the pan for about 10 minutes. Then, carefully lift the squares out using the parchment paper and transfer to a wire rack to cool completely before cutting into squares.

Serve and Enjoy: Once cooled, cut into squares and enjoy as a nutritious breakfast, snack, or even dessert! Store leftovers in an airtight container for up to a week.
