Ingredients

2 ripe bananas, mashed

2 cups rolled oats

1 ½ cups almond milk (or any milk of your choice)

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup dark chocolate chips or dried fruit (optional)

Fresh banana slices and a drizzle of honey for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

Mix the Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond milk, honey or maple syrup, and vanilla extract. Stir until smooth and well-combined.

Combine Dry Ingredients: In a separate bowl, mix the rolled oats, baking powder, ground cinnamon, and salt until evenly blended.

Combine Wet and Dry Mixtures: Add the dry oat mixture to the wet ingredients, stirring gently until everything is well incorporated. If you're using nuts or chocolate chips, fold them in at this stage.

Fill the Muffin Tin: Pour the oatmeal mixture into the prepared muffin tin, filling each cup about three-quarters full. If desired, place a banana slice on top of each cup and drizzle with a bit of honey for extra sweetness.

Bake: Bake in the preheated oven for about 20-25 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.

Cool and Serve: Allow the oatmeal cups to cool in the pan for a few minutes before transferring them to a wire rack. Serve warm or at room temperature. Enjoy as a breakfast option or snack!
