Sweet Banana Oat Snack Bars

Ingredients
  

2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/2 cup unsweetened shredded coconut

1/4 cup dark chocolate chips (optional)

1/4 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon sea salt

1/4 cup chopped nuts (walnuts, almonds, or pecans)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

    Combine Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond butter, honey (or maple syrup), and vanilla extract. Mix well until smooth and fully combined.

      Mix the Dry Ingredients: In another bowl, mix together the rolled oats, shredded coconut, cinnamon, and sea salt.

        Mix Together: Gradually add the dry mixture to the wet mixture, stirring well to incorporate. If desired, fold in the dark chocolate chips and chopped nuts at this stage.

          Spread in Pan: Pour the mixture into the prepared baking pan and press it down firmly with a spatula or your hands to ensure an even layer.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the center has set.

              Cool & Cut: Once baked, remove from the oven and let it cool in the pan for about 10 minutes. Use the parchment overhang to lift the bars out of the pan and place them on a wire rack to cool completely before cutting into squares or rectangles.

                Storage: Store the snack bars in an airtight container at room temperature for up to 5 days or refrigerate for up to 2 weeks.
