1 cup rolled oats

1 cup milk (dairy or non-dairy)

1 cup whole wheat flour

1/2 cup brown sugar, packed

1/4 cup maple syrup

1/3 cup vegetable oil or melted coconut oil

2 large eggs

1 tsp vanilla extract

1 tbsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 cup fresh or frozen blueberries (if using frozen, do not thaw)

1 tsp lemon zest (optional, for added brightness)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with non-stick spray.

    Prepare Oats: In a mixing bowl, combine the rolled oats and milk. Let it sit for about 15 minutes to allow the oats to soak and soften.

      Mix Wet Ingredients: In another bowl, whisk together the brown sugar, maple syrup, vegetable oil, eggs, and vanilla extract until well combined.

        Combine Mixtures: Once the oats have soaked, add the wet mixture to the oats and stir until incorporated.

          Combine Dry Ingredients: In a separate bowl, mix together the whole wheat flour, baking powder, baking soda, and salt.
