Ingredients

4 cod fillets (about 6 oz each)

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon fresh lime juice

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon olive oil

1/2 teaspoon black pepper

1/2 teaspoon salt

2 green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and prepare a baking dish by lightly greasing it with olive oil or cooking spray.

Make the Marinade: In a medium mixing bowl, combine the sweet chili sauce, soy sauce, lime juice, minced garlic, grated ginger, olive oil, black pepper, and salt. Whisk until well combined.

Marinate the Cod: Place the cod fillets in the prepared baking dish and pour the marinade over the top. Make sure to coat the fish evenly. Let it marinate for at least 15 minutes (or up to 1 hour in the refrigerator) to enhance the flavors.

Bake the Cod: After marinating, place the baking dish in the preheated oven. Bake for 15-20 minutes, or until the cod is opaque and flakes easily with a fork. Basting the fillets with the marinade halfway through helps to keep them moist.

Garnish & Serve: Once cooked, remove the cod from the oven and let it rest for a few minutes. Top with chopped green onions and sprinkle with sesame seeds before serving.

Enjoy: Serve the Sweet Chili Baked Cod with steamed jasmine rice or a fresh garden salad for a complete meal.
