1 lb ground chicken

1 tablespoon olive oil

2 cloves garlic, minced

1 small onion, finely chopped

1 red bell pepper, finely chopped

1 carrot, grated

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/2 teaspoon ground ginger

Salt and black pepper to taste

1 head of butter lettuce or iceberg lettuce, leaves separated

1/4 cup chopped fresh cilantro

1/4 cup chopped green onions

Sesame seeds for garnish (optional)

Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the minced garlic and chopped onion, sautéing for 2-3 minutes until fragrant.

    Add Vegetables: Stir in the ground chicken, breaking it apart with a spatula. Cook until browned and no longer pink. Add the chopped red bell pepper and grated carrot, cooking for another 3-4 minutes until the vegetables soften.

      Season the Mixture: Pour in the sweet chili sauce, soy sauce, rice vinegar, sesame oil, and ground ginger. Stir everything together until the chicken and vegetables are well-coated. Let it simmer for about 2-3 minutes to combine flavors. Season with salt and black pepper to taste.
