Sweet Chili Tofu Stir-Fry

Ingredients
  

1 block (14 oz) firm tofu, pressed and cubed

2 tablespoons cornstarch

2 tablespoons vegetable oil

1 bell pepper, sliced (red, yellow, or green)

1 cup broccoli florets

1 cup snap peas

1 medium carrot, sliced thinly

3 cloves garlic, minced

1 inch piece of ginger, minced

3 tablespoons sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Tofu:

    - Press the tofu for at least 30 minutes to remove excess moisture. Once pressed, cut it into bite-sized cubes.

      - In a large mixing bowl, toss the tofu cubes with cornstarch until evenly coated.

        Cook the Tofu:

          - Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

            - Add the tofu cubes in a single layer and fry for about 5-7 minutes, turning occasionally, until golden brown and crispy on all sides. Remove the tofu from the pan and set aside.

              Stir-Fry the Vegetables:

                - In the same skillet or wok, add the remaining tablespoon of vegetable oil.

                  - Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.

                    - Add the sliced bell pepper, broccoli florets, snap peas, and carrot slices. Stir-fry for about 5-6 minutes until the vegetables are tender-crisp.

                      Combine with Sauce:

                        - Reduce the heat to medium and return the crispy tofu to the skillet with the vegetables.

                          - Pour in the sweet chili sauce, soy sauce, rice vinegar, and sesame oil, stirring to coat everything evenly. Cook for an additional 2-3 minutes until heated through.

                            Finishing Touches:

                              - Remove from heat and taste, adjusting seasonings if necessary.

                                - Serve the stir-fry hot, garnished with chopped green onions and a sprinkle of sesame seeds.
