8 oz. pasta (fusilli or penne work well)

1 cup fresh sweet corn (you can use frozen if necessary)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

½ cup red onion, finely chopped

½ cup basil pesto (store-bought or homemade)

¼ cup olive oil

1 tbsp lemon juice

Salt and pepper to taste

¼ cup grated Parmesan cheese (optional)

Fresh basil leaves for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually around 8-10 minutes. Drain and rinse under cold water to cool.

    Prep the Vegetables: While the pasta is cooking, prepare the vegetables. If using fresh corn, cook it by boiling for about 3-5 minutes until tender, then drain and cool. If using frozen, simply thaw the corn.

      Mix the Dressing: In a large bowl, whisk together the basil pesto, olive oil, lemon juice, salt, and pepper. Adjust the seasoning to your taste.

        Combine Ingredients: Add the cooled pasta, corn, cherry tomatoes, cucumber, and red onion to the bowl with the pesto dressing. Toss until everything is evenly coated.

          Add Cheese: If using, sprinkle the grated Parmesan cheese over the salad and give it another gentle toss.
