Sweet Corn & Avocado Salad

Ingredients
  

2 cups fresh sweet corn (or 1 can of sweet corn, drained)

1 large ripe avocado, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely diced

1/4 cup fresh cilantro, chopped

1 lime, juiced

2 tablespoons olive oil

1 teaspoon ground cumin

Salt and pepper to taste

Optional: 1 jalapeño, finely chopped (for a spicy kick)

Instructions
 

Prepare the Corn: If using fresh corn, bring a pot of water to a boil. Add the corn and cook for about 5 minutes until tender. Drain and let it cool. If using canned corn, simply drain it and set aside.

    Combine Ingredients: In a large mixing bowl, combine the cooled sweet corn, diced avocado, halved cherry tomatoes, diced red onion, and chopped cilantro.

      Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and pepper. If you love some heat, add the finely chopped jalapeño to the dressing.

        Toss and Mix: Drizzle the dressing over the salad ingredients and gently toss until everything is well coated. Be careful not to mash the avocado!

          Taste and Adjust: Give the salad a taste and adjust seasoning with more salt, pepper, or lime juice if needed.

            Serve: Serve immediately as a refreshing side dish, or chill it in the refrigerator for about 30 minutes for the flavors to meld together before serving.
