2 cups fresh sweet corn (cooked and cooled)

1 large cucumber (diced)

1 red bell pepper (diced)

1/2 red onion (finely chopped)

1/4 cup fresh cilantro (chopped)

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon honey (optional)

Salt and pepper to taste

1 avocado (sliced, for topping)

Prepare the Ingredients: If using fresh corn, cook it in boiling water for about 3-5 minutes and then cool it down in an ice bath to stop the cooking process. If using canned corn, drain and rinse well.

    Mix the Vegetables: In a large mixing bowl, combine the cooked sweet corn, diced cucumber, red bell pepper, and finely chopped red onion.

      Create the Dressing: In a separate small bowl, whisk together the lime juice, olive oil, honey (if using), salt, and pepper until well combined.
