3 cups fresh corn kernels (about 4-5 ears of corn) or 2 cans of sweet corn, drained

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1 avocado, diced

1/4 cup fresh cilantro, chopped

1/4 cup crumbled feta cheese (optional)

2 tablespoons olive oil

2 tablespoons fresh lime juice

1 teaspoon honey

Salt and pepper to taste

1/2 teaspoon cumin (optional for extra flavor)

Instructions
 

Prepare the Corn: If using fresh corn, boil the ears of corn in water for 5-7 minutes. Once cooked, cool them, then carefully cut the kernels off the cob. If using canned corn, simply drain and rinse the kernels.

    Mix the Veggies: In a large mixing bowl, combine the sweet corn, diced red bell pepper, halved cherry tomatoes, finely chopped red onion, diced avocado, and chopped cilantro.

      Make the Dressing: In a small bowl, whisk together the olive oil, fresh lime juice, honey, cumin, salt, and pepper until well combined.

        Combine and Toss: Pour the dressing over the corn and vegetable mixture and toss gently until everything is evenly coated. If you're using feta cheese, sprinkle it over the salad and toss lightly again.

          Chill: Let the salad sit for about 15 minutes at room temperature or refrigerate it for 30 minutes to allow the flavors to meld.
