1 cup fresh sweet corn kernels (about 2 ears of corn)

1 cup cherry tomatoes, halved

1 small red onion, finely diced

1 avocado, diced

1 jalapeño, finely chopped (optional for spice)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and pepper to taste

8 small corn tortillas

Olive oil (for drizzling)

Feta cheese or Cotija cheese (optional, for topping)

Prepare the Corn: If using fresh corn, bring a pot of water to a boil. Add the corn and cook for 3-4 minutes until tender. Remove and let cool, then cut kernels off the cob. For canned or frozen corn, simply drain, rinse, and set aside.

    Mix the Filling: In a medium-sized bowl, combine the sweet corn, cherry tomatoes, red onion, avocado, jalapeño (if using), cilantro, lime juice, cumin, garlic powder, salt, and pepper. Toss gently to combine all ingredients. Let the mixture sit for about 10 minutes to allow the flavors to meld.
