1 cup buttermilk

1/2 cup unsalted butter, melted and cooled slightly

2 large eggs

1/4 cup honey

1 cup corn kernels (fresh, frozen, or canned)

1/2 teaspoon cinnamon (optional, for a hint of warmth)

1/4 cup chopped fresh herbs (e.g., chives or cilantro, optional for added flavor)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and lightly grease a muffin tin or line it with paper liners.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, salt, and cinnamon until well combined.

      Mix Wet Ingredients: In another bowl, mix the buttermilk, melted butter, honey, and eggs until fully blended.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix; a few lumps are perfectly fine!
