Sweet Glazed Peach Cobbler

4 cups fresh peaches, peeled and sliced (or 4 cups canned peaches, drained)

1/2 cup sugar

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 teaspoon cinnamon

2 tablespoons cornstarch

For the Cobbler Topping:

1 cup all-purpose flour

1 cup sugar

2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

3/4 cup milk

1 teaspoon vanilla extract

For the Sweet Glaze:

1 cup powdered sugar

2 tablespoons milk

1 teaspoon vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Peach Filling:

      - In a large mixing bowl, combine the sliced peaches with sugar, vanilla extract, lemon juice, and cinnamon.

        - Dust the mixture with cornstarch and stir gently until well combined.

          - Transfer the peach mixture into a greased 9x13 inch baking dish.

            Make the Cobbler Topping:

              - In another bowl, whisk together the flour, sugar, baking powder, and salt.

                - Pour in the melted butter and milk, and add the vanilla extract. Stir until just combined; do not overmix.

                  - Carefully dollop the cobbler topping over the peach filling in the baking dish. Use a spatula to spread it out gently, allowing some of the peach filling to peek through.

                    Bake the Cobbler:

                      - Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and a toothpick inserted into the cobbler comes out clean.

                        Prepare the Sweet Glaze:

                          - In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk if too thick or more powdered sugar if too thin.
