2 ripe peaches, diced

1 small red onion, finely chopped

1 medium jalapeño, seeded and minced (adjust for spiciness)

1/4 cup fresh cilantro, chopped

1 lime, juiced

1 tablespoon honey or agave syrup (optional for extra sweetness)

1/4 teaspoon sea salt

1/4 teaspoon black pepper

Start by washing the peaches thoroughly. Cut them in half, remove the pit, and then dice the flesh into small pieces. Place them in a medium mixing bowl.

    Finely chop the red onion and add it to the bowl with the diced peaches.
