Ingredients

2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, rinsed and drained

1 can (14 oz) diced tomatoes (with juices)

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

2 cups vegetable broth

2 tsp chili powder

1 tsp ground cumin

1/2 tsp smoked paprika

1/4 tsp cayenne pepper (optional, for heat)

Salt and pepper to taste

2 tablespoons olive oil

1 avocado, diced (for serving)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened. Then, stir in the minced garlic and bell pepper, cooking for an additional 2-3 minutes until fragrant.

Add Spices: Stir in the chili powder, cumin, smoked paprika, cayenne pepper (if using), and a pinch of salt and pepper. Let the spices cook for about a minute to release their flavors.

Incorporate Sweet Potatoes: Add the diced sweet potatoes to the pot and stir to coat them in the spices and aromatics. Cook for about 5 minutes while stirring occasionally.

Combine Ingredients: Pour in the diced tomatoes with their juices, black beans, and vegetable broth. Stir well to combine all the ingredients.

Simmer: Bring the chili to a boil, then reduce the heat to low and cover. Let it simmer for 25-30 minutes, or until the sweet potatoes are tender and the chili has thickened. Stir occasionally to prevent sticking.

Adjust Seasoning: Taste the chili and adjust the seasoning if necessary, adding more salt, pepper, or spices as desired.

Serve: Ladle the chili into bowls and top with diced avocado, fresh cilantro, and a squeeze of lime juice for added freshness.
