6 strips of bacon, chopped

1 medium onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 tsp smoked paprika

½ tsp ground cumin

2 tablespoons olive oil

3 green onions, sliced (for garnish)

4 large eggs (optional, for serving)

Fresh parsley, chopped (for garnish)

Cook the bacon: In a large cast-iron skillet over medium heat, add the chopped bacon. Cook until it’s crispy, about 5-7 minutes. Remove the bacon from the skillet and set it aside on a paper towel-lined plate, leaving the bacon drippings in the skillet.

    Sauté the sweet potatoes: In the same skillet, add olive oil to the bacon drippings. Once hot, add the diced sweet potatoes. Season with salt, pepper, smoked paprika, and ground cumin. Cook for about 10 minutes, stirring occasionally until the sweet potatoes begin to soften and develop a golden crust.

      Add onions and peppers: Stir in the diced onion and red bell pepper to the skillet with the sweet potatoes. Continue to cook for another 5-7 minutes or until the vegetables are tender and slightly caramelized.

        Garlic addition: Add the minced garlic to the skillet, stirring until fragrant, about 1 minute.

          Combine bacon: Return the crisp bacon to the skillet, mixing it into the sweet potato and vegetable mixture. Cook for an additional 2-3 minutes to heat through and allow the flavors to meld together.
