Sweet Potato Black Bean Tacos

2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, rinsed and drained

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon chili powder

Salt and pepper to taste

8 small corn tortillas

1 avocado, sliced

½ cup radishes, thinly sliced

½ cup fresh cilantro, chopped

1 lime, cut into wedges

Optional: hot sauce for serving

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare Sweet Potatoes: In a large bowl, combine the diced sweet potatoes with olive oil, cumin, smoked paprika, garlic powder, chili powder, salt, and pepper. Toss until the sweet potatoes are evenly coated.

      Roast Sweet Potatoes: Spread the seasoned sweet potatoes on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until they're tender and lightly browned, stirring halfway through the cooking time.

        Heat Black Beans: While the sweet potatoes are roasting, place black beans in a small saucepan over medium heat. Warm them through, stirring occasionally, and season with a pinch of salt and some pepper.

          Warm Tortillas: To warm the corn tortillas, either heat them in a dry skillet over medium heat for 30 seconds on each side or wrap them in aluminum foil and place them in the oven for the last 5 minutes of the sweet potatoes cooking time.

            Assemble Tacos: Once the sweet potatoes are done, take a warm tortilla and layer with roasted sweet potatoes, black beans, avocado slices, and radishes. Top with chopped cilantro.

              Garnish and Serve: Squeeze fresh lime juice over the filled tortillas. Add hot sauce if desired. Serve immediately and enjoy your delicious tacos!
