Ingredients

4 medium sweet potatoes (about 2 pounds), peeled and cubed

½ cup milk (or coconut milk for a dairy-free option)

½ cup brown sugar

1 teaspoon vanilla extract

½ teaspoon cinnamon

¼ teaspoon nutmeg

¼ teaspoon salt

2 large eggs

1 cup pecans, chopped

¼ cup all-purpose flour

¼ cup melted butter (or coconut oil for a dairy-free option)

½ cup mini marshmallows (optional for topping)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C).

Cook Sweet Potatoes: In a large pot, bring water to a boil. Add the cubed sweet potatoes and cook until tender, about 15-20 minutes. Drain and transfer them to a mixing bowl.

Mash the Potatoes: Using a potato masher or fork, mash the sweet potatoes until smooth.

Mix Ingredients: To the mashed sweet potatoes, add the milk, brown sugar, vanilla extract, cinnamon, nutmeg, salt, and eggs. Mix until well combined and creamy.

Prepare Casserole Dish: Pour the sweet potato mixture into a greased 9x13 inch baking dish.

Make Pecan Topping: In a separate bowl, combine the chopped pecans, flour, melted butter, and an additional 2 tablespoons of brown sugar. Mix until crumbly.

Top Casserole: Evenly sprinkle the pecan mixture over the sweet potato base. If using, add mini marshmallows on top.

Bake: Place the casserole in the oven and bake for 25-30 minutes, until the topping is golden and the casserole is heated through.

Serve: Let it cool for a few minutes before serving. Enjoy this creamy and crunchy dish as a delicious side at gatherings or holidays!
