Sweet Potato Hash with Eggs

2 tablespoons olive oil

4 large eggs

Fresh parsley or cilantro, chopped (for garnish)

Prep the Sweet Potatoes: Begin by peeling and dicing the sweet potatoes into small cubes for even cooking. Aim for about ½-inch pieces.

    Cook the Vegetables: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced sweet potatoes and sprinkle with salt and pepper. Sauté for about 5-7 minutes, stirring occasionally, until they start to soften.
