2 large sweet potatoes, peeled and diced

1 cup cooked Hatch green chilies, diced (canned or fresh)

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

4 large eggs (optional)

Fresh cilantro, chopped for garnish

Avocado slices for serving

Prepare the sweet potatoes: In a large skillet, heat one tablespoon of olive oil over medium heat. Add the diced sweet potatoes and cook for about 10-15 minutes, stirring occasionally, until the potatoes are tender and start to brown slightly. You can cover the skillet with a lid to speed up the cooking.

    Add the aromatics: Once the sweet potatoes are cooked, push them to one side of the skillet and add the remaining tablespoon of olive oil to the other side. Add the chopped onion and diced red bell pepper, sautéing for 3-4 minutes until they soften. Stir in the minced garlic and cook for an additional minute until fragrant.

      Incorporate the spices and chilies: Sprinkle the ground cumin, smoked paprika, chili powder, salt, and pepper over the vegetables. Then, add the diced Hatch green chilies, mixing everything well to combine. Cook for another 5 minutes, allowing the flavors to meld together.

        Optional eggs: If you’d like to add eggs, create small wells in the hash for each egg. Crack an egg into each well, cover the skillet, and let cook for about 5-7 minutes, or until the eggs reach your desired doneness.
