2 cans young green jackfruit in water or brine, drained and rinsed

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon cayenne pepper (adjust to taste)

1 cup BBQ sauce (store-bought or homemade)

1 tablespoon apple cider vinegar

1 tablespoon maple syrup (optional, for added sweetness)

Salt and pepper to taste

Burger buns, for serving

Coleslaw (vegan, optional, for topping)

Prepare the Jackfruit: Begin by draining and rinsing the jackfruit thoroughly. Remove the hard core and seeds (if any) and then, using your fingers or two forks, shred the jackfruit into bite-sized pieces. Set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic. Sauté for about 5 minutes until the onions become translucent and fragrant.

      Add Spices: Add the smoked paprika, ground cumin, and cayenne pepper to the skillet. Stir well, cooking for an additional minute until spices are aromatic.

        Cook the Jackfruit: Toss the shredded jackfruit into the skillet and mix it with the seasoned onion and garlic. Cook for about 5-7 minutes, stirring occasionally, until the jackfruit begins to brown slightly.

          Mix the Sauce: In a separate bowl, combine the BBQ sauce, apple cider vinegar, and maple syrup. Mix well until fully combined, then pour this mixture over the jackfruit in the skillet.

            Simmer: Reduce the heat to low and cover the skillet. Let the jackfruit simmer for 20-25 minutes, stirring occasionally. If the mixture becomes too dry, add a splash of water or veggie broth.

              Season to Taste: After simmering, remove the lid and taste the jackfruit. Adjust flavors with salt, pepper, or extra BBQ sauce as desired.
