3-4 pounds pork shoulder (also known as pork butt)

1 tablespoon olive oil

2 teaspoons smoked paprika

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon ground black pepper

1 tablespoon sea salt

1 cup apple cider vinegar

1/2 cup brown sugar

1 cup ketchup

1/4 cup Worcestershire sauce

2 tablespoons Dijon mustard

1 tablespoon soy sauce

1 tablespoon hot sauce (adjust to taste)

1 tablespoon lemon juice

1 cup coleslaw (optional, for serving)

8-10 hamburger buns or sandwich rolls

Instructions
 

Prepare the Pork: Pat the pork shoulder dry with paper towels. In a small bowl, mix together the smoked paprika, onion powder, garlic powder, black pepper, and sea salt. Rub the spice mixture all over the pork shoulder.

    Sear the Pork: In a large skillet over medium-high heat, add olive oil. Once hot, sear the pork shoulder on all sides until browned (about 3-4 minutes per side). This will help develop the flavor.

      Make the BBQ Sauce: In a separate bowl, whisk together the apple cider vinegar, brown sugar, ketchup, Worcestershire sauce, Dijon mustard, soy sauce, hot sauce, and lemon juice until well combined.

        Slow Cook the Pork: Place the seared pork shoulder in a slow cooker. Pour the BBQ sauce over the meat, ensuring it's well-coated. Cover and cook on low for 8-10 hours, or until the pork is tender and easily shreds with a fork.

          Shred the Pork: Once the pork is cooked, carefully remove it from the slow cooker and place it on a cutting board. Using two forks, shred the pork into bite-sized pieces. Return the shredded pork to the slow cooker and stir it in the sauce to combine.
