3-4 lbs pork shoulder (also known as pork butt)

1 tablespoon olive oil

2 teaspoons smoked paprika

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon black pepper

1 teaspoon salt

1/2 teaspoon cayenne pepper (optional for heat)

1 cup apple cider vinegar

1 cup ketchup

1/2 cup brown sugar

1/4 cup honey

2 tablespoons Worcestershire sauce

2 tablespoons Dijon mustard

1 tablespoon soy sauce

1 teaspoon liquid smoke (optional)

Sliced sandwich rolls or buns for serving

Coleslaw (optional, for topping)

Prepare the Pork: Start by trimming excess fat from the pork shoulder. Pat it dry with paper towels.

    Season the Meat: In a small bowl, mix together smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Rub the spice mixture evenly over the pork shoulder.

      Sear the Pork: In a large skillet, heat olive oil over medium-high heat. Sear the pork shoulder on all sides until browned, about 4-5 minutes per side. This step enhances the flavor.

        Combine BBQ Sauce: In a mixing bowl, whisk together apple cider vinegar, ketchup, brown sugar, honey, Worcestershire sauce, Dijon mustard, soy sauce, and liquid smoke until well combined.

          Slow Cook the Pork: Transfer the seared pork shoulder to a slow cooker. Pour the BBQ sauce mixture over the pork, ensuring it’s covered evenly.

            Cook: Cover the slow cooker and set it to low for 8-10 hours or high for 4-6 hours, until the pork is tender and easily shreds with a fork.

              Shred the Pork: Once cooked, carefully remove the pork from the slow cooker and let it rest for about 10 minutes. Using two forks, shred the pork into bite-sized pieces.
