For the Macaron Shells:

1 cup (100g) almond flour

1 3/4 cups (200g) powdered sugar

3 large egg whites, at room temperature

1/4 cup (50g) granulated sugar

1/2 teaspoon vanilla extract

A pinch of salt

Red gel food coloring (optional)

For the Strawberry Buttercream Filling:

1/2 cup (113g) unsalted butter, softened

2 cups (240g) powdered sugar

1/4 cup (60g) fresh strawberries, puréed

1 teaspoon vanilla extract

A pinch of salt

For Decoration:

Edible glitter or heart-shaped sprinkles

Extra strawberry slices (optional)

Instructions
 

Prepare the Baking Sheets:

    Preheat your oven to 300°F (150°C). Line two baking sheets with parchment paper and, if desired, use a template to help maintain consistent sizes (about 1.5 inches wide).

      Make the Macaron Batter:

        In a food processor, combine almond flour and powdered sugar. Pulse to create a fine mixture, then sift into a large bowl to remove any lumps.

          Whisk the Egg Whites:

            In a clean, dry bowl, whisk the egg whites with a pinch of salt using an electric mixer at medium speed until frothy. Gradually add granulated sugar and increase the speed to high. Whip until stiff peaks form, which should take about 5-7 minutes. Add the vanilla extract and a few drops of red gel food coloring (if desired) during the last minute of whipping.

              Combine Ingredients:

                Gently fold the dry ingredients into the whipped egg whites using a rubber spatula. Be careful not to over-mix; the mixture should flow like lava and achieve a shiny appearance.

                  Pipe the Macarons:

                    Transfer the batter into a piping bag fitted with a round tip. Pipe small circles onto the lined baking sheets, leaving space between each macaron. Tap the baking sheets gently on the counter to release any air bubbles and help flatten the tops.

                      Rest the Macarons:

                        Let the macarons sit at room temperature for 30-60 minutes, or until a skin forms on the surface. This helps to create the signature macaron “foot.”

                          Bake:

                            Bake the macarons in the preheated oven for 15-20 minutes, rotating the sheets halfway through. They should not be browned but should have a firm shell. Remove from the oven and let cool completely on the parchment.

                              Prepare the Strawberry Buttercream:

                                In a mixing bowl, beat the softened butter until creamy. Gradually add in the powdered sugar and mix until combined. Add the puréed strawberries, vanilla extract, and salt. Beat on high for about 2–3 minutes until fluffy.

                                  Assemble the Macarons:

                                    Once the macaron shells have cooled completely, pipe a small amount of strawberry buttercream onto the flat side of one macaron shell. Top with another macaron shell to create a sandwich.

                                      Decorate:

                                        Gently sprinkle edible glitter or heart-shaped sprinkles on top of the assembled macarons. For an extra touch, place a small strawberry slice on top of some.

                                          Serve and Enjoy:

                                            Allow the macarons to rest in the refrigerator for a few hours (or overnight) to let the flavors meld. Serve at room temperature and enjoy your Sweetheart Macarons with your special someone!
